A North London cake manufacturer and its director, Ismail Colak, have been ordered to pay £10,698.96 in fines, costs and surcharges after inspectors discovered mouse droppings and serious hygiene failures.
Sugarbake (London) Limited, based in Nobel Road, Edmonton, admitted six food hygiene offences. The company and Colak pleaded guilty at Highbury Corner Magistrates’ Court on 6 August 2026, Enfield Council said.
Officers inspecting the premises on 29 September 2025 found mouse droppings in production and storage areas and the staff kitchen. Other findings included dirty, rusty taps, poorly maintained chillers, food spillages, mould, damp and structural damage.
Open food bags and ingredients in dirty containers posed contamination risks. The business voluntarily closed immediately on officers’ advice because conditions presented an imminent public health risk.
Sugarbake received a £4,000 fine, while Colak was fined £750. Each was also ordered to pay a £300 victim surcharge and £2,674.48 in prosecution costs.
Councillor Elisa Morreale, cabinet member for licensing, said the judge described the premises as “appalling”.
“Maintaining hygiene practices in premises where food is handled and prepared is not optional,” she said.
